In January, FCHS collaborated with Children’s Home Society of New Jersey to provide a Healthy Eating During Pregnancy lesson for individuals enrolled in their Head Start program. Maggie, a Nutritional Sciences undergraduate student from Rutgers University, offered this lesson in Spanish. Maggie volunteers with Ricardo Kairios, Mercer County FCHS Educator/Assistant Professor, to gain experience in nutrition education and assist with expanding Rutgers Cooperative Extension’s reach to Spanish-speaking audiences. During the lesson, Maggie highlighted recommendations about creating healthy meals using the USDA tool “MyPlate” and important food safety guidelines.
