Every Tuesday morning in March, FCHS Educator Cate Diamond taught a lesson from the “Eat Smart, Live Strong” curriculum to clients at Prestige of Ewing Adult Medical Daycare. Each lesson included group exercise, information about eating more fruits and vegetables, active living goal setting, and a cooking demonstration with a taste test. The clients especially enjoyed the exercise, which included chair movements such as leg lifts, torso twists, ankle rotations, and shoulder presses. It was a joy to see the clients reach their exercise goals each week and improve their strength and flexibility. Clients also participated in fun activities such as a game modeled after “The Price is Right,” in which they guessed the prices of various fruits and veggies. Cate made recipes such as Veggie Fried Rice, Spaghetti Squash with Tomatoes, Basil and Parmesan, Vegetable Chili, and Chicken Salad, which everyone thoroughly enjoyed!
