An FCHS educator taught a series of nutrition classes on opening day at the Greenwood Avenue Farmers Market. The sun was shining brightly, and the wafting smell of garlic drew the market shoppers to the FCHS tent, where the educator cooked a healthy, nutritious dish made from three varieties of Jersey Fresh summer squash purchased from the market farmer. Participants learned about the USDA MyPlate and how to try to incorporate the five food groups (fruits, vegetables, grains, protein, and dairy) into their meals. The educator reinforced the concept by doing a cooking demonstration, incorporating a vegetable (summer squash), grain (quinoa), protein (chickpeas), and dairy items (Parmesan cheese) into the recipe. Everyone enjoyed tasting the yummy summer squash recipe. Many said they never thought about combining so many foods into a dish but would like to try making similar easy, one-pan MyPlate meals like this in the future!
